What's for dinner...

So I haven't posted anything in quite a while and really that's because besides work and daily life, we haven't had anything too exciting to share! Last weekend Andrea and Gabe came down to do dinner with Jer and I at Bandera's and it inspired me to figure out their Macho Salad recipe. I thought I'd share since it's what's for dinner at our house tonight:

Salad:
Mixed Greens
Rotisserie Chicken
Dates
Chopped Nuts
Goat Cheese
Tomato
Cornbread Croutons - I'm substituting these for my homemade croutons b/c I looked up the nutrition facts on Bandera's cornbread and it's not good especially when you have a whole skillet in front of you!
*Can't remember...maybe avocado? If not it'd be a good addition!

Dressing:
1/4 c. Lemon juice
2T. Brown mustard
1T. Minced garlic
1T. Cider Vinegar
1/4 T. Brown Sugar
1/4 t. Salt
1/8 t. Pepper
1/8 t. dried basil
1/8 t. dried oregano
1 1/4c. Olive oil

Place all ingrediants except Olive Oil into a bowl. Slowly whisk in the Oil to emulsify. Refrigerate.
